Our Winemaker, Matthew Copping, started his wine journey in 1992 with the offer of a vintage job from the captain of his cricket team, a noted Coonawarra winemaker. Later that year, he enrolled to study Winemaking at Adelaide University. Many years, vintages and changes of scenery saw Matthew attain his degree in 2005, while he was living in Germany. Arriving back to Australia in 2006, Matthew took a job in McLaren Vale and has been there since, and finally in 2019 decided to start making his own wine. With the support and a little patience from his wife Rebecca and daughters Charlotte & Harriet, the Copping Wines label came to life.
We work with dedicated growers to produce small volumes of traditionally made single vineyard wines. Our winemaking methods include using hand plunging, gentle pressing and minimal additions to create individual wines.
